Baked Pork Belly

This dish is a traditional Czech recipe. It is not one of the best choices if you are watching your calories, but it is a delicious meal that you can enjoy once in a while.

I was able to buy pork belly at Whole Foods and was excited that I can finally prepare this meal for my husband. The name of this meal in the Czech language is “Veprove vypecky” which can be translated as baked pork belly. This meal is usually served with a side of spinach and Czech potato dumplings.

This recipe is very easy to prepare. It just needs a longer time of baking (a little over 2 hours) to reach the amazingly tender meat. Pork belly is generally a quite fatty cut of meat which makes this dish very flavorful but if you prefer leaner meat you can mix the pork belly with other leaner pork meat cuts.

  1. Prepare your ingredients. Wash the pork belly and, peel the onion and garlic.
  2. Cut the pork belly into smaller pieces (2 inches x 2 inches), add a generous amount of salt, pepper, and cumin. Cut the onion and spread it on the bottom of the baking dish and add the pork belly pieces onto the onion with the garlic (you can cut the garlic into smaller pieces or just cut the whole garlic head in half and add it into the baking dish). Add a little bit of water into the baking dish to prevent the onion and meat from burning.  Finally, cover the baking dish with aluminum foil.
  3. Bake the pork belly covered for two hours with regular checking and adding water if needed. After two hours, uncover the meat and bake for another 20 minutes until the meat will is a nice golden color.

  • 2 pounds pork belly
  • 2 pieces of onion
  • 1 head of garlic
  • 1/2 cup water
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp whole cumin


  • Wash the pork belly and dry with paper towels. Cut the meat into smaller pieces approximately 2-inch x 2-inch. Add salt, pepper, and cumin to the meat.
  • Cut onion, garlic, and spread them on the bottom of a baking dish.
  • Spread the pork belly pieces on the onion layer and add a little bit of water to the baking dish. Cover the baking dish tightly with aluminum foil.
  • Bake the meat at 370 F degrees for 2 hours. Take a look several times during this baking period and add water if needed. After 2 hours, uncover the baking dish and bake for additional 20 minutes or until the meat gets s nice golden color.
  • You can serve the baked pork belly with a side of spinach and potato dumplings.
